Chiffon Pandan Cake


4 egg yolk
50 gr sugar
100 gr self raising flour
100 ml coconut milk
50 ml vegetable oil
a pinch of salt
1/4 pandan paste ( I used blue food coloring because my son wanted blue cake instead of green from pandan paste)
1 tsp Baking powder
Mix together pandan paste, coconut milk, egg yolk, sugar, veg oil with spatula. Mix well.
Sift in the flour + Baking powder. Mix until smooth.
Then set aside.


6 white eggs
1/4 tsp cream of tartar
50 gr sugar
Whisk the white at high speed.
Put the cream of tartar. Whisk until foamy. Put sugar in. Whisk.


Combine 2 mixture.
Adding the white mixture only 1/3 of it. Fold the mixture together very gently until smooth.
Add the remaining 2/3 of white.
Repeat folding very gently until smooth.
Pour mixture into tube pan. Burst any visible big bubbles. Place into 170C/ 350F 45 minutes.
